Amaretto Peaches

1/2 c. part - skim ricotta cheese
1 tbsp. sugar
1/4 tsp. grated lemon peel
4 ripe peach halves
Crushed amaretto cookies

Combine cheese, sugar and lemon peel in bowl. Spoon equal amounts onto cut sides of 4 ripe peach halves. Sprinkle each half with 1/2 crushed amaretto cookie. Makes 4.
